To ensure freshness and quality, the olives are delivered to our collection center within 24 hours of harvesting. They are placed in ventilated containers and stored in controlled environments, where they can naturally mature through fermentation. This unforced process allows the organoleptic characteristics to fully develop without altering the raw material.

Our Tuscan olives are packaged according to standards that preserve quality and facilitate their use in professional settings. The solutions adopted meet the needs of the B2B food sector: practical, safe packaging suitable for optimal product preservation, even after opening.

The rolling Tuscan landscape, with its temperate climate and well-drained soils, offers ideal conditions for olive cultivation. The ongoing collaboration between farmers and Neri agronomists allows each plot to be valued, optimizing irrigation and natural treatments against pests. This integrated approach helps keep the plants healthy and produces fruit with recognizable organoleptic characteristics.
Leccino olives destined for the cafeteria are handpicked using the “brucatura” technique, avoiding damage to the pulp. Once harvested, they are transported in perforated containers that ensure ventilation and delivered to our center within 24 hours. Here, they are graded, selected, and subjected to natural fermentation in dedicated warehouses. The entire process, overseen by expert personnel, maintains the high-quality standards defined by Neri.
